Chicken Alfredo

Ingredients
- Chicken breasts - 2 large, boneless and skinless
- Salt and pepper - to taste
- Olive oil - 2 tablespoons
- Butter - 2 tablespoons
- Garlic - 3 cloves, minced
- Heavy cream - 1 cup
- Chicken broth - 1/2 cup
- Parmesan cheese - 1/2 cup, grated
- Sun-dried tomatoes - 1/2 cup, chopped
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- In a large skillet, heat olive oil over medium heat.
- Sear the chicken breasts on both sides until they are cooked through and golden brown. Remove and set aside.
- In the same skillet, add butter and garlic, sautéing until fragrant.
- Pour in chicken broth and heavy cream, and bring to a gentle simmer.
- Stir in sun-dried tomatoes and Parmesan cheese until the cheese is melted and the sauce thickens.
- Return the cooked chicken breasts to the skillet, spooning the sauce over them. Let them simmer in the sauce for a few minutes.
- Enjoy your Tuscan Chicken Pasta warm with a side of garlic bread or a light salad.
