Ingredients


  • 2 chicken breasts or thighs (boneless, skinless)
  • 2 cups cabbage, shredded
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions


  • Cook the chicken: In a large pot, heat the olive oil over medium heat
  • Sauté the aromatics: In the same pot, add the chopped onion and garlic.
  • Add carrots and cabbage: Stir in the sliced carrots and shredded cabbage.
  • Add tomatoes and broth: Pour in the diced tomatoes and chicken broth.
  • Shred the chicken
  • Season
  • Garnish and serve
