
Cabbage Soup with Chicken

Ingredients
- 2 chicken breasts or thighs (boneless, skinless)
- 2 cups cabbage, shredded
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the chicken: In a large pot, heat the olive oil over medium heat
- Sauté the aromatics: In the same pot, add the chopped onion and garlic.
- Add carrots and cabbage: Stir in the sliced carrots and shredded cabbage.
- Add tomatoes and broth: Pour in the diced tomatoes and chicken broth.
- Shred the chicken
- Season
- Garnish and serve
